Nellie’s Free Range Eggs

imageI learned something new, May is National EGG month, and June 3rd is National Egg Day. Did you know? My kids love eggs, as do I, and we can never have enough.  Right now my kids are patiently waiting for our chickens to lay eggs.  I can only imagine what we will make that day.  For now, there are Nellie’s Free Range Eggs. They are the FIRST certified humane farm in the country, they can go wherever they want, never caged.

My kids love scrambled eggs, cupcakes and making pancakes all requiring eggs.  As a chicken mom myself, I like that these are free range “happy chickens”.  Although I am not the cook/baker, I use eggs in many of my box recipes.  Such as cupcakes, my kids love them. I did scrambled eggs for the kids, nothing fancy but super quick and healthy breakfast in the morning before the bus. We are sleepers so have 20 minutes max every morning to wake up, dressed and eat then out the door for the bus.  The kids gobbled everything up in seconds.
